To Carol entire family, it saddens us to hear about the loss of Carol. To anyone who knew her, She was an amazing woman. We wish we could be at the memorial service this coming Saturday, unfortunately we’re flying back from Reno at that time.

My deepest condolences to Carol’s family.
I took many cooking classes from Carol and hosted many a party with her help.
She was a great teacher and gave me the confidence and taught me the skills I needed.
I will always remember her energy and attention to detail.

I am so sorry for your loss. I met Carol when I was in my 20’s in the mid to late 70’s I think. I was a waitress and wanted to learn more about food. I heard there was a woman teaching cooking and I wanted to attend her classes. I did. I took her first class and loved it. I started buying cooking equipment and the love affair started. I took a cake decorating class which started me on my own career making cakes for restaurants. Knowing Carol gave me the belief that women can succeed in the food business and even excell like Carol did. Over the years we would run into each other and she was always so much fun to talk to. I was sorry when her restaurant closed. I always had a great food experience there. She will be missed by me but never forgotten. Teri from Mother Mousse

My deepest condolences to the Family.
I wanted to do my internship under a female chef, I chose Carol because of her fierceness and absolute love and respect of food. I learned so much under her tutelage. Late last year I contacted her after many years. It was a good, I realized how much I'd missed her. Our plan to to meet and revive our friendship and love of a beautiful plate.
Thank you, Thank you Carol.
I will miss you deeply.

My family and I are deeply saddened by Chef Carol’s passing. I took classes from Carol for several years. She made me the cook/baker I am today. Our family had a tradition of having Christmas Eve dinner at Carol’s Cafe for years. At my 25th wedding anniversary my husband Guy asked Carol to make the cake for the surprise party my he organized. See the attached photo. The second photo is at the cafe celebrating Carol's 40th anniversary. We will all miss Carol but we have wonderful memories of the many dinners at Carol’s Cafe. Our deepest condolences to the entire family.

I knew Carol for over 45 years. While we lived apart for most of them, we kept in touch. Our last exchange occurred at the end of August. With gratitude to Maria, it is with great sorrow I learned today of her passing. I met her through Terri, with whom I was involved for five years. This was the era of the cooking school being downstairs in her home. Across that period, I was at the house countless times often for two week stretches a few times a year. We got along famously. She welcomed me to call her Ma and I loved doing so. It seems what we did most was laugh. I can hear her laughing right now. Of course with her, the other favorite activity for me was eating. I was the luckiest guinea pig in the world, getting to try new recipes. Once, I’d eaten so many fried wontons they poked out in my belly. Terri, Carol, and I couldn't stop laughing which kind of hurt.
Another favorite memory of mine was accompanying her to a prestigious culinary event in Manhattan. I remember seeing James Beard, a colleague with whom she shared a few words. He was lucky to know her. Earlier in the day, my task was to assist her in getting a large platter of her delectable meatballs, carefully arranged, from home in Staten Island to the venue in Manhattan. We went by car (of course) but before departing, as I recall, we had to momentarily and very steadily set the heavy platter on the hood. The next thing we knew, dozens of small meatballs were rolling down Scranton Street. This was, in the category of food transportation to a major event, a complete disaster. I’d never seen Carol when something THIS WRONG occurred. (Sure, with cooking classes you never knew what might not go as planned.) We looked at each other. I waited to see how she’d react. Well, you laugh or you cry and so of course hysterical laughter ensued as we ran like hell down the street in our fine attire desperately collecting meatballs. In our state of panic, I’m not sure we knew why. It’s not like they’d be returned to the platter! Of course she’d made enough to still have an abundant arrangement. So off we went, wiping tears of hilarity from our eyes. Those are among my many memories of my time with Carol. I’ll cherish each and every one. I love you, Ma.
